BBQ Chuck Roast
A simple to make gluten-free and dairy-free BBQ chuck roast that melts in your mouth, offering an outdoor-like slow-cooked BBQ flavor without a grill or smoker.

Ingredients
- 1 tbsp Salt
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
- 1 tbsp Paprika
- 1 tbsp Smoked Paprika
- 1 tsp Black Pepper
- 3 lbs Beef Chuck Roast cut into thirds
- 0 Mustard of choice
- 0.5 cup Beef Bone Broth
- 1 cup BBQ Sauce of choice
Instructions
- Preheat your oven to 325°F.
- In a small bowl, combine 1 tbsp salt, 1 tbsp onion powder, 1 tbsp garlic powder, 1 tbsp paprika, 1 tbsp smoked paprika, and 1 tsp black pepper. Whisk well.
- Coat the chuck roast evenly with a thin layer of mustard, then spread the spice rub over the meat using your hands to ensure the roast is evenly coated.
- Add the meat to your roasting dish. If using a Dutch oven or roasting pan with aluminum foil, add 1/2 cup beef bone broth before covering. Roast on the center rack, covered, for 2.5 hours. Remove from the oven and check for doneness.
- If the meat pulls apart easily, increase oven temperature to 450°F. Shred meat into large chunks, discard any large pieces of fat, and pour 1 cup BBQ sauce of choice over the top. Toss well, then return to the oven and roast uncovered for 15-20 minutes until the top layer has caramelized.
- If the roast does not pull apart easily, return it to the oven covered for 30 more minutes, then follow the steps for shredding, tossing in BBQ sauce, and finishing the roast uncovered at 450°F.
