Greek-Inspired Shrimp Bowls with Lemony Yogurt

Ingredients
- 3 cloves garlic minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 pound shrimp peeled and deveined
- 1 medium zucchini sliced
- 2 bell peppers sliced
- 1 tablespoon extra-virgin olive oil
- 2 cups long-grain white rice cooked
- 0.5 cup plain whole-milk Greek yogurt
- 0.25 cup fresh parsley chopped
- 1 medium lemon wedges for serving
Instructions
- Prepare the garlic-paprika mixture by combining minced garlic, paprika, dried oregano, lemon juice, and extra-virgin olive oil.
- Divide the garlic-paprika mixture equally between the peeled and deveined shrimp and the sliced vegetables. Toss well to coat.
- Sauté the sliced vegetables in a skillet over medium heat until they are softened. Transfer them to a separate bowl once done.
- In the same skillet, add the marinated shrimp and cook until they turn golden brown and opaque.
- Serve the cooked shrimp and vegetables over a bed of cooked white rice. Top with a dollop of plain Greek yogurt, a sprinkle of fresh parsley, and a wedge of lemon.
