Greek-Inspired Shrimp Bowls with Lemony Yogurt

Ingredients

  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 pound shrimp peeled and deveined
  • 1 medium zucchini sliced
  • 2 bell peppers sliced
  • 1 tablespoon extra-virgin olive oil
  • 2 cups long-grain white rice cooked
  • 0.5 cup plain whole-milk Greek yogurt
  • 0.25 cup fresh parsley chopped
  • 1 medium lemon wedges for serving

Instructions

  1. Prepare the garlic-paprika mixture by combining minced garlic, paprika, dried oregano, lemon juice, and extra-virgin olive oil.
  2. Divide the garlic-paprika mixture equally between the peeled and deveined shrimp and the sliced vegetables. Toss well to coat.
  3. Sauté the sliced vegetables in a skillet over medium heat until they are softened. Transfer them to a separate bowl once done.
  4. In the same skillet, add the marinated shrimp and cook until they turn golden brown and opaque.
  5. Serve the cooked shrimp and vegetables over a bed of cooked white rice. Top with a dollop of plain Greek yogurt, a sprinkle of fresh parsley, and a wedge of lemon.
