Caramelised Fennel, Peach & Burrata Crostini
A fancy, seasonal snack featuring caramelised fennel, juicy peaches, and creamy burrata on sourdough. Simple yet sophisticated, perfect for brunch or dinner parties.

Ingredients
- 2 tbsp olive oil
- 1 small head fennel sliced 5mm thick
- 0 pinch salt
- 4 sprigs thyme
- 2 clove garlic finely chopped
- 4 whole peaches cut into thin wedges
- 1 ball burrata smashed
- 4 slices sourdough toasted
- 1 tbsp honey
- 1 tbsp balsamic glaze
- 2 tbsp chives finely sliced
Instructions
- Place a non-stick frying pan over medium high heat and add olive oil, fennel, a pinch of salt, and thyme. Cook for 3-4 minutes, stirring often to caramelise and soften.
- Add the garlic and cook for 30 seconds longer before adding the peaches. Cook for another 2-3 minutes, stirring often to soften and slightly caramelise the peaches. Set aside off the heat.
- Spread the toasted sourdough slices with smashed burrata.
- Spoon the caramelized fennel and peach mixture onto the burrata-topped toast. Drizzle with honey and balsamic glaze and sprinkle with chives.
