Peach Cobbler with Homemade Cream Cheese Ice Cream

Ingredients

  • 6 medium peach sliced
  • 4 tbsp butter
  • 0.5 cup light brown sugar or 1/3 cup if very ripe
  • 0.5 tsp cinnamon
  • 0.5 tsp cornstarch
  • 0.25 cup orange juice
  • 0.75 cup flour
  • 0.5 cup granulated sugar
  • 0.5 tsp lemon zest fresh
  • 1.5 tsp baking powder
  • 0 salt a pinch
  • 0.5 cup milk
  • 4 tbsp melted butter
  • 1 tsp vanilla extract
  • 4 oz cream cheese
  • 4 oz mascarpone
  • 2 cups heavy whipping cream
  • 14 oz sweetened condensed milk
  • 0 vanilla bean or vanilla extract use either

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Core and cut the peaches into 1/4-inch slices.
  3. In a large pan, melt 4 tablespoons of butter and add the sliced peaches. Sprinkle with light brown sugar and ground cinnamon, then cook for 10-15 seconds while stirring.
  4. In a small bowl, combine cornstarch and orange juice until the cornstarch dissolves. Add the mixture to the cooking peaches and cook, while gently stirring for 1-2 minutes. Remove from heat and transfer the peach mixture to a 9x6 baking dish.
  5. In a medium bowl, mix together flour, sugar, lemon zest, baking powder, and a pinch of salt for the topping. Add milk, melted butter, and vanilla extract, and mix until just combined. Pour the batter over the peach mixture in the baking dish.
  6. Bake for 40-50 minutes until golden brown. Let it cool for 15-20 minutes before serving.
  7. Serve the warm peach cobbler with homemade cream cheese ice cream.
