Peach Cobbler with Homemade Cream Cheese Ice Cream

Ingredients
- 6 medium peach sliced
- 4 tbsp butter
- 0.5 cup light brown sugar or 1/3 cup if very ripe
- 0.5 tsp cinnamon
- 0.5 tsp cornstarch
- 0.25 cup orange juice
- 0.75 cup flour
- 0.5 cup granulated sugar
- 0.5 tsp lemon zest fresh
- 1.5 tsp baking powder
- 0 salt a pinch
- 0.5 cup milk
- 4 tbsp melted butter
- 1 tsp vanilla extract
- 4 oz cream cheese
- 4 oz mascarpone
- 2 cups heavy whipping cream
- 14 oz sweetened condensed milk
- 0 vanilla bean or vanilla extract use either
Instructions
- Preheat the oven to 350°F (175°C).
- Core and cut the peaches into 1/4-inch slices.
- In a large pan, melt 4 tablespoons of butter and add the sliced peaches. Sprinkle with light brown sugar and ground cinnamon, then cook for 10-15 seconds while stirring.
- In a small bowl, combine cornstarch and orange juice until the cornstarch dissolves. Add the mixture to the cooking peaches and cook, while gently stirring for 1-2 minutes. Remove from heat and transfer the peach mixture to a 9x6 baking dish.
- In a medium bowl, mix together flour, sugar, lemon zest, baking powder, and a pinch of salt for the topping. Add milk, melted butter, and vanilla extract, and mix until just combined. Pour the batter over the peach mixture in the baking dish.
- Bake for 40-50 minutes until golden brown. Let it cool for 15-20 minutes before serving.
- Serve the warm peach cobbler with homemade cream cheese ice cream.
