Greek Turkey Meatballs with Mixed Olive Sweet Pepper and Feta Salad

Ingredients

  • 1.5 lbs ground turkey
  • 1 egg
  • 1 cup spinach chopped
  • 0.25 cup red onion minced
  • 0.25 cup feta cheese crumbled
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dijon mustard
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 3 tbsp olive oil
  • 0.75 cup greek yogurt
  • 0.5 cup Persian cucumber grated
  • 2 tbsp dill
  • 2 cloves garlic grated
  • 1 tbsp olive oil
  • 0.5 lemon juice from 1/2 lemon
  • 0.5 tsp salt
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 0.5 tsp dried oregano
  • 1 cup sweet cherry peppers sliced
  • 1 cup cucumber diced
  • 0.5 cup red onion minced
  • 1.5 cups Kalamata olives
  • 0.5 cup feta cheese crumbled
  • 0 rice optional

Instructions

  1. In a large bowl, mix 1 1/2 lbs ground turkey, 1 egg, 1 cup chopped spinach, 1/4 cup minced red onion, 1/4 cup crumbled feta, 1 tsp garlic powder, 1 tsp dried oregano, 1 tsp dijon mustard, 1 tsp salt, and 1/2 tsp pepper until combined. Transfer to the fridge.
  2. Form the mixture into about 16 meatballs using wetted hands to prevent sticking.
  3. Heat a skillet over medium heat and add 2-3 tablespoons of olive oil. Pan sear the meatballs for 3-4 minutes on each side, for a total of 12-15 minutes, until cooked through and the internal temperature reaches 165°F.
  4. For the tzatziki, mix 3/4 cup greek yogurt, 1/2 cup grated Persian cucumbers, 2 tablespoons dill, 2 garlic cloves grated, 1 tablespoon olive oil, juice of 1/2 lemon, and 1/2 teaspoon salt until combined. Set aside.
  5. In another large bowl, whisk 3 tablespoons olive oil, 1 tablespoon lemon juice, 1 tablespoon red wine vinegar, and 1/2 teaspoon oregano. Add 1 cup sliced sweet cherry peppers, 1 cup diced cucumber, 1/2 cup minced red onion, 1 1/2 cups mixed Kalamata and green olives, and 1/2 cup crumbled feta. Stir to coat in the dressing. Transfer to the fridge to marinate.
  6. Serve the meatballs with the salad and top with a generous amount of tzatziki. Optionally, serve with rice for a complete meal.
