Greek Turkey Meatballs with Mixed Olive Sweet Pepper and Feta Salad

Ingredients
- 1.5 lbs ground turkey
- 1 egg
- 1 cup spinach chopped
- 0.25 cup red onion minced
- 0.25 cup feta cheese crumbled
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dijon mustard
- 1 tsp salt
- 0.5 tsp black pepper
- 3 tbsp olive oil
- 0.75 cup greek yogurt
- 0.5 cup Persian cucumber grated
- 2 tbsp dill
- 2 cloves garlic grated
- 1 tbsp olive oil
- 0.5 lemon juice from 1/2 lemon
- 0.5 tsp salt
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- 0.5 tsp dried oregano
- 1 cup sweet cherry peppers sliced
- 1 cup cucumber diced
- 0.5 cup red onion minced
- 1.5 cups Kalamata olives
- 0.5 cup feta cheese crumbled
- 0 rice optional
Instructions
- In a large bowl, mix 1 1/2 lbs ground turkey, 1 egg, 1 cup chopped spinach, 1/4 cup minced red onion, 1/4 cup crumbled feta, 1 tsp garlic powder, 1 tsp dried oregano, 1 tsp dijon mustard, 1 tsp salt, and 1/2 tsp pepper until combined. Transfer to the fridge.
- Form the mixture into about 16 meatballs using wetted hands to prevent sticking.
- Heat a skillet over medium heat and add 2-3 tablespoons of olive oil. Pan sear the meatballs for 3-4 minutes on each side, for a total of 12-15 minutes, until cooked through and the internal temperature reaches 165°F.
- For the tzatziki, mix 3/4 cup greek yogurt, 1/2 cup grated Persian cucumbers, 2 tablespoons dill, 2 garlic cloves grated, 1 tablespoon olive oil, juice of 1/2 lemon, and 1/2 teaspoon salt until combined. Set aside.
- In another large bowl, whisk 3 tablespoons olive oil, 1 tablespoon lemon juice, 1 tablespoon red wine vinegar, and 1/2 teaspoon oregano. Add 1 cup sliced sweet cherry peppers, 1 cup diced cucumber, 1/2 cup minced red onion, 1 1/2 cups mixed Kalamata and green olives, and 1/2 cup crumbled feta. Stir to coat in the dressing. Transfer to the fridge to marinate.
- Serve the meatballs with the salad and top with a generous amount of tzatziki. Optionally, serve with rice for a complete meal.
