One-Pan Pork Stir Fry

Cook time: 30 minutes

Servings: 4

Ingredients

  • 1 tbsp sesame oil
  • 5 oz sliced shiitake mushrooms
  • 1 pinch salt
  • 1 lb ground pork
  • 1 pinch salt
  • 0.5 lb ground beans
  • 1 cup onion
  • 1 tsp ginger paste
  • 2 tbsp hoisin
  • 1 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 bowl rice

Instructions

  1. Add sesame oil to a large heavy bottomed pot over medium-high heat.
  2. Add mushrooms and a hefty pinch of salt. Cook down for a few minutes or until the mushrooms start to heat up.
  3. Add ground pork and another pinch of salt, and use a meat masher to break up the meat.
  4. Once it’s almost cooked through, add the green beans, onions, garlic and ginger. Stir and cook until the pork is cooked through and the green beans are starting to soften.
  5. Make a little space in the middle of the pan and add hoisin, peanut butter and soy sauce and mash it together. Once combined, stir everything together and cook for a few more minutes until meat is coated and the green beans are crunchy yet cooked through.
  6. Remove from heat and add crispy chili oil if you like it spicy. Serve with rice.
