Pear, Almond & Honey Loaf

Ingredients

  • 0 parchment paper for lining the tin
  • 2 conference pears peeled and grated
  • 2 eggs whisked
  • 60 g honey
  • 60 ml olive oil
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 100 ml milk
  • 180 g plain flour
  • 65 g ground almonds
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 tsp cinnamon
  • 1 tbsp honey for drizzling
  • 1 pear extra, sliced for topping
  • 0 flaked almonds for topping

Instructions

  1. Preheat oven to 170C (340F) and line a 2lb loaf tin with parchment paper.
  2. Peel and coarsely grate 2 conference pears. Squeeze out excess liquid using kitchen towel.
  3. In a large bowl, whisk together 2 eggs, 60g honey, 60ml olive oil, 1 tsp vanilla extract, 1 tsp almond extract, 100ml milk, and the grated pears until well combined.
  4. Add 180g plain flour, 65g ground almonds, 1 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt, and 1 tsp cinnamon to the bowl. Fold until just combined.
  5. Pour the mixture into the lined tin and bake on the middle shelf for 40 minutes, or until a knife inserted into the center comes out clean.
  6. While it’s still hot, drizzle over a spoonful of honey. Let cool for 5–10 minutes in the tin, then another 10 minutes before slicing.
  7. Top with sliced pear and a handful of flaked almonds for decoration.
