Pear, Almond & Honey Loaf

Ingredients
- 0 parchment paper for lining the tin
- 2 conference pears peeled and grated
- 2 eggs whisked
- 60 g honey
- 60 ml olive oil
- 1 tsp vanilla extract
- 1 tsp almond extract
- 100 ml milk
- 180 g plain flour
- 65 g ground almonds
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.25 tsp salt
- 1 tsp cinnamon
- 1 tbsp honey for drizzling
- 1 pear extra, sliced for topping
- 0 flaked almonds for topping
Instructions
- Preheat oven to 170C (340F) and line a 2lb loaf tin with parchment paper.
- Peel and coarsely grate 2 conference pears. Squeeze out excess liquid using kitchen towel.
- In a large bowl, whisk together 2 eggs, 60g honey, 60ml olive oil, 1 tsp vanilla extract, 1 tsp almond extract, 100ml milk, and the grated pears until well combined.
- Add 180g plain flour, 65g ground almonds, 1 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt, and 1 tsp cinnamon to the bowl. Fold until just combined.
- Pour the mixture into the lined tin and bake on the middle shelf for 40 minutes, or until a knife inserted into the center comes out clean.
- While it’s still hot, drizzle over a spoonful of honey. Let cool for 5–10 minutes in the tin, then another 10 minutes before slicing.
- Top with sliced pear and a handful of flaked almonds for decoration.
