Honey Mustard Chicken Cobb Salad

Honey Mustard Chicken Cobb Salad

Ingredients

  • 0.5 cup olive oil
  • 0.25 cup honey
  • 0.25 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 0 salt
  • 0 black pepper
  • 1 pound chicken tenders
  • 1 head lettuce chopped
  • 2 medium tomatoes sliced
  • 4 hard-boiled eggs sliced
  • 6 slices bacon cooked and crumbled
  • 1 avocado diced
  • 0.5 cup feta cheese crumbled

Instructions

  1. In a small bowl, combine olive oil, honey, Dijon mustard, and apple cider vinegar. Whisk until you have a smooth dressing.
  2. Place the chicken tenders in a bowl and pour half of the dressing over them. Let them marinate in the refrigerator for at least 15 minutes.
  3. In a skillet over medium heat, pan-sear the marinated chicken until fully cooked, about 5-7 minutes on each side.
  4. While the chicken is cooking, prepare the salad ingredients: chop the lettuce, slice the tomatoes, hard-boil and slice the eggs, cook and crumble the bacon, and dice the avocado.
  5. In a large salad bowl, assemble the salad with lettuce as the base. Add tomatoes, eggs, bacon, and avocado. Slice the pan-seared chicken and place it on top of the salad.
  6. Pour the remaining honey mustard dressing over the assembled salad. Serve immediately.
