Honey Mustard Chicken Cobb Salad
A vibrant spring salad with pan-seared chicken, crispy bacon, creamy avocado, and a sweet tangy honey mustard dressing.

Ingredients
- 0.5 cup olive oil
- 0.25 cup honey
- 0.25 cup Dijon mustard
- 2 tablespoons apple cider vinegar
- 0 salt
- 0 black pepper
- 1 pound chicken tenders
- 1 head lettuce chopped
- 2 medium tomatoes sliced
- 4 hard-boiled eggs sliced
- 6 slices bacon cooked and crumbled
- 1 avocado diced
- 0.5 cup feta cheese crumbled
Instructions
- In a small bowl, combine olive oil, honey, Dijon mustard, and apple cider vinegar. Whisk until you have a smooth dressing.
- Place the chicken tenders in a bowl and pour half of the dressing over them. Let them marinate in the refrigerator for at least 15 minutes.
- In a skillet over medium heat, pan-sear the marinated chicken until fully cooked, about 5-7 minutes on each side.
- While the chicken is cooking, prepare the salad ingredients: chop the lettuce, slice the tomatoes, hard-boil and slice the eggs, cook and crumble the bacon, and dice the avocado.
- In a large salad bowl, assemble the salad with lettuce as the base. Add tomatoes, eggs, bacon, and avocado. Slice the pan-seared chicken and place it on top of the salad.
- Pour the remaining honey mustard dressing over the assembled salad. Serve immediately.
