Tuna Melt Sandwich

Tuna Melt Sandwich

Ingredients

  • 0.333 cup Mayonnaise
  • 1 tsp Dijon Mustard
  • 2 tsp Lemon Juice
  • 1 tbsp Fresh Parsley very finely diced
  • 2 tbsp Gherkins finely diced
  • 2 Spring Onions finely diced
  • 0.125 tsp Salt
  • 0.125 tsp Black Pepper
  • 2 cans Canned Tuna in brine, drained
  • 6 slices Bread medium-large, firm like sourdough
  • 0 Butter as needed for spreading
  • 4 oz Cheddar Cheese grated
  • 4 oz Red Leicester Cheese grated
  • 0 Hot Sauce to serve, optional

Instructions

  1. In a small mixing bowl, combine the mayonnaise, Dijon mustard, lemon juice, finely diced parsley, diced gherkins, spring onions, and salt & black pepper.
  2. Drain the tuna well and stir it through the sauce until everything is evenly combined. Adjust seasoning if desired.
  3. Butter one side of each slice of bread. Flip them over and place cheddar cheese on the unbuttered side, followed by the tuna mixture, then Red Leicester cheese. Top with another slice of bread, buttered side up.
  4. Heat a large pan over medium heat. Fry 2-3 sandwiches at a time, cooking each side until it's deep golden and crisp with the cheese melted in the middle.
  5. Slice the sandwiches in half and serve while hot. Optionally, add hot sauce to taste.
