One Pan Gnocchi and Asparagus Bake
A quick and flavorful one pan gnocchi bake with fresh spring vegetables and mini turkey sausage meatballs.

Ingredients
- 1 bunch asparagus chopped into 1 inch pieces
- 1 whole leek sliced into ½ inch rounds
- 1 whole zucchini sliced into ½ inch rounds then quartered
- 350 g gnocchi
- 1 tbsp olive oil
- 2 tbsp pesto
- 1.5 tsp garlic powder
- 1 tbsp Italian spice blend
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 lb italian chicken or turkey sausages removed from casing
- 2 tbsp butter melted
- 1 lemon lemon juice
- 4 leaves basil finely chopped
- 2 cloves garlic pressed
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 cups arugula
- 0 lemon basil sauce prepared
- 0.5 cup feta cheese
- 1 lemon lemon zest
Instructions
- Preheat your oven to 425°F.
- Chop the asparagus into 1-inch pieces, and slice the leek into ½-inch rounds. Slice the zucchini into ½-inch rounds, then quarter the slices.
- Toss the chopped vegetables, gnocchi, olive oil, pesto, garlic powder, Italian spice blend, salt, and pepper on a large sheet pan.
- Remove the casings from the sausages and form mini meatballs. Scatter them across the sheet pan.
- Bake in the oven for 20 minutes.
- Meanwhile, prepare the lemon basil sauce by mixing melted butter, lemon juice, finely chopped basil, pressed garlic, salt, and pepper.
- After 20 minutes, remove the sheet pan from the oven and add arugula. Drizzle the prepared lemon basil sauce over the dish. Return to the oven for an additional 10 minutes.
- Once baked, sprinkle feta cheese and lemon zest uniformly across the dish before serving.
