Mediterranean Cauliflower Salad

Ingredients

  • 1 head cauliflower cut into medium florets
  • 2 tablespoons olive oil
  • 0.5 teaspoon kosher salt
  • 0.5 cup dried currants
  • 0.25 cup capers
  • 1 juice from 1 lemon lemon juice
  • 0.5 teaspoon garlic paste
  • 1 tablespoon honey
  • 0.5 cup parsley
  • 2 tablespoons olive oil
  • 3 ounces feta cheese crumbled
  • 1 zest from 1 orange orange zest

Instructions

  1. Preheat your oven to 425°F (218°C).
  2. Cut up 1 head of cauliflower into medium bite-sized florets.
  3. Place the cauliflower on a large baking sheet and add 2 tablespoons of olive oil and 1/2 teaspoon of kosher salt. Mix well.
  4. Bake in the preheated oven for 20 minutes or until the bottoms of the florets are golden brown.
  5. While the cauliflower is roasting, in a bowl, mix together 1/2 cup dried currants, 1/4 cup capers, the juice from 1 lemon, 1/2 teaspoon garlic paste, 1 tablespoon honey, 1/2 cup chopped parsley, and 2 tablespoons of olive oil.
  6. Once the cauliflower is done, remove it from the oven and immediately toss with the caper vinaigrette you prepared.
  7. Plate the cauliflower and top with 3 ounces of crumbled feta cheese and the zest from 1 orange.
  8. Serve immediately or at room temperature.
