Mediterranean Cauliflower Salad
This is not just any side salad — it's a deliciously flavorful cauliflower dish perfect for enhancing any meal. Roasted cauliflower is mixed with a lively lemony caper-currant dressing, honey, crumbled feta, and orange zest, making it a standout at any gathering.

Ingredients
- 1 head cauliflower cut into medium florets
- 2 tablespoons olive oil
- 0.5 teaspoon kosher salt
- 0.5 cup dried currants
- 0.25 cup capers
- 1 juice from 1 lemon lemon juice
- 0.5 teaspoon garlic paste
- 1 tablespoon honey
- 0.5 cup parsley
- 2 tablespoons olive oil
- 3 ounces feta cheese crumbled
- 1 zest from 1 orange orange zest
Instructions
- Preheat your oven to 425°F (218°C).
- Cut up 1 head of cauliflower into medium bite-sized florets.
- Place the cauliflower on a large baking sheet and add 2 tablespoons of olive oil and 1/2 teaspoon of kosher salt. Mix well.
- Bake in the preheated oven for 20 minutes or until the bottoms of the florets are golden brown.
- While the cauliflower is roasting, in a bowl, mix together 1/2 cup dried currants, 1/4 cup capers, the juice from 1 lemon, 1/2 teaspoon garlic paste, 1 tablespoon honey, 1/2 cup chopped parsley, and 2 tablespoons of olive oil.
- Once the cauliflower is done, remove it from the oven and immediately toss with the caper vinaigrette you prepared.
- Plate the cauliflower and top with 3 ounces of crumbled feta cheese and the zest from 1 orange.
- Serve immediately or at room temperature.
