Melting Beets with Feta & Pistachios

Ingredients

  • 2.5 pounds beets trimmed, peeled, and sliced 1-inch thick
  • 2 tablespoons extra-virgin olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground pepper
  • 0.5 cup lower-sodium vegetable broth
  • 1 teaspoon orange zest
  • 2 tablespoons orange juice
  • 1 tablespoon honey
  • 1 tablespoon orange juice
  • 0.25 cup feta cheese crumbled
  • 3 tablespoons pistachios salted, roasted, chopped
  • 1 tablespoon honey
  • 0 orange zest for garnish

Instructions

  1. Preheat your oven to 450°F.
  2. Peel and slice the beets into 1-inch thick pieces.
  3. In a large bowl, toss the beets with olive oil, salt, and pepper. Arrange them in a single layer in a 9x13-inch metal baking pan and cover with foil.
  4. Roast the covered beets in the oven for 40 minutes until tender.
  5. Remove the foil and mix together broth, orange zest, 2 tablespoons orange juice, and 1 tablespoon honey. Pour over beets and continue roasting uncovered for another 12 to 15 minutes.
  6. Drizzle the remaining tablespoon of orange juice over the cooked beets. Sprinkle with crumbled feta cheese and chopped pistachios. Drizzle with the remaining tablespoon of honey and garnish with additional orange zest if desired.
