Garlic Herb Roasted Olives with Burrata Cheese

Ingredients

  • 2 cups mixed olives pitted
  • 0.33 cup extra virgin olive oil
  • 6 cloves garlic smashed
  • 1 shallot quartered
  • 1 lemon quartered
  • 2 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • 0 teaspoon chili flakes
  • 3 burrata cheese at room temperature
  • 2.5 tablespoons honey
  • 0 black pepper
  • 0 fresh basil or dill
  • 0 ciabatta bread

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine mixed olives, extra virgin olive oil, smashed garlic, quartered shallot, quartered lemon, thyme, oregano, and chili flakes.
  3. Roast the olives in the oven for about 20 minutes or until the oil is sizzling and the aroma is strong.
  4. Remove the baking dish from the oven and gently nestle room-temperature burrata cheese balls into the warm olives.
  5. Drizzle honey over the burrata and olives, and season with freshly ground black pepper.
  6. Garnish with fresh basil or dill and serve immediately with crusty ciabatta bread on the side.
