Coriander Fennel Crusted Baked Halibut with Lemony Butter Beans

Ingredients

  • 12 oz halibut filet, pin bones removed
  • 0.5 tsp coriander
  • 0.5 tsp fennel
  • 15 oz butter beans drained and rinsed
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic crushed
  • 0.25 tsp salt
  • 1 lemon cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Remove any remaining pin bones from the halibut filet using tweezers.
  3. Create a spice mixture by combining ground coriander and fennel. Coat one side of the halibut filet with the spice mixture.
  4. Bake the halibut, spice side up, in the preheated oven for 6 to 10 minutes until cooked through.
  5. While the fish bakes, warm the pre-cooked butter beans in a saucepan over medium heat. Season with olive oil, lemon juice, crushed garlic, and salt.
  6. Remove the halibut from the oven and carefully peel off the skin. It should come off easily.
  7. Plate the seasoned butter beans and place the halibut filet on top. Serve with an additional squeeze of lemon if desired.
