Coriander Fennel Crusted Baked Halibut with Lemony Butter Beans

Ingredients
- 12 oz halibut filet, pin bones removed
- 0.5 tsp coriander
- 0.5 tsp fennel
- 15 oz butter beans drained and rinsed
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic crushed
- 0.25 tsp salt
- 1 lemon cut into wedges
Instructions
- Preheat your oven to 400°F (200°C).
- Remove any remaining pin bones from the halibut filet using tweezers.
- Create a spice mixture by combining ground coriander and fennel. Coat one side of the halibut filet with the spice mixture.
- Bake the halibut, spice side up, in the preheated oven for 6 to 10 minutes until cooked through.
- While the fish bakes, warm the pre-cooked butter beans in a saucepan over medium heat. Season with olive oil, lemon juice, crushed garlic, and salt.
- Remove the halibut from the oven and carefully peel off the skin. It should come off easily.
- Plate the seasoned butter beans and place the halibut filet on top. Serve with an additional squeeze of lemon if desired.
