Matcha Strawberry Cookies
Deliciously soft cookies infused with a hint of matcha and studded with white chocolate and freeze-dried strawberries, perfect for tea time.

Ingredients
- 0 parchment paper for lining the baking sheet
- 8 tbsp unsalted butter room temp
- 100 grams brown sugar
- 100 grams sugar
- 2 grams salt
- 2 large eggs cold
- 280 grams all-purpose flour
- 12 grams ceremonial matcha 2 tbsp
- 1 tsp baking powder
- 1 tsp baking soda
- 200 grams white chocolate lindt or valrhonna
- 20 grams freeze-dried strawberries + extra for garnish
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the room-temperature butter until creamy. Add the brown sugar, granulated sugar, and salt. Beat until fluffy.
- Add the eggs one at a time to the sugar-butter mixture, beating well after each addition.
- Sift together the flour, matcha, baking powder, and baking soda. Gradually add to the wet mixture, stirring just until combined.
- Fold in the white chocolate and freeze-dried strawberries until evenly distributed throughout the dough.
- Use a cookie scoop to portion dough onto the prepared baking sheet. Lightly press extra freeze-dried strawberries on top for garnish.
- Bake for 12-15 minutes or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
