Matcha Strawberry Cookies

Deliciously soft cookies infused with a hint of matcha and studded with white chocolate and freeze-dried strawberries, perfect for tea time.

Matcha Strawberry Cookies

Ingredients

  • 0 parchment paper for lining the baking sheet
  • 8 tbsp unsalted butter room temp
  • 100 grams brown sugar
  • 100 grams sugar
  • 2 grams salt
  • 2 large eggs cold
  • 280 grams all-purpose flour
  • 12 grams ceremonial matcha 2 tbsp
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 200 grams white chocolate lindt or valrhonna
  • 20 grams freeze-dried strawberries + extra for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the room-temperature butter until creamy. Add the brown sugar, granulated sugar, and salt. Beat until fluffy.
  3. Add the eggs one at a time to the sugar-butter mixture, beating well after each addition.
  4. Sift together the flour, matcha, baking powder, and baking soda. Gradually add to the wet mixture, stirring just until combined.
  5. Fold in the white chocolate and freeze-dried strawberries until evenly distributed throughout the dough.
  6. Use a cookie scoop to portion dough onto the prepared baking sheet. Lightly press extra freeze-dried strawberries on top for garnish.
  7. Bake for 12-15 minutes or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
