Spicy Cucumber Peanut Noodles

Spicy Cucumber Peanut Noodles

Ingredients

  • 0.25 cups peanut butter
  • 3 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp avocado oil
  • 1 tbsp maple syrup
  • 2 tbsp water
  • 1 clove garlic minced or grated
  • 2 tsp ginger grated
  • 2 tbsp sambal
  • 7 oz buckwheat soba noodles
  • 1 cucumber spiralized or thinly sliced
  • 3 green onions thinly sliced
  • 0.33 cups cilantro roughly chopped
  • 0 sesame seeds
  • 0 gochugaru or Aleppo pepper optional for garnish

Instructions

  1. Prepare the peanut sauce by combining smooth peanut butter, fresh lime juice, soy sauce, avocado oil, maple syrup, water, minced garlic, grated ginger, and sambal in a medium-sized bowl and whisk well.
  2. Cook the soba noodles according to the packaging instructions. Once cooked, rinse them under cold water to stop the cooking and to cool them to room temperature.
  3. Allow any excess water to drain from the noodles and then transfer them to a large mixing bowl along with the spiralized or thinly sliced cucumber.
  4. Drizzle the peanut sauce over the noodles and cucumber, then add 2/3 of the sliced green onions. Toss everything well until thoroughly combined.
  5. Before serving, garnish the noodles with the remaining green onions, chopped cilantro, sesame seeds, and, if desired, a sprinkle of gochugaru or Aleppo pepper for an extra kick.
