Boozy Rice Pudding with Amaro Soaked Raisins

Ingredients
- 1 cup white rice
- 4 cups milk
- 1 teaspoon cinnamon
- 2 pieces star anise
- 1 teaspoon fennel seeds
- 1 teaspoon black peppercorns
- 0.5 cup raisins
- 0.5 cup amaro
- 0.5 cup milk
- 0 to taste cinnamon
- 0 drizzle simple syrup optional
Instructions
- Rinse 1 cup of white rice under cold water to remove excess starch.
- In a saucepan, bring 4 cups of milk to a gentle simmer.
- Toast 1 teaspoon of cinnamon, 2 star anise, 1 teaspoon of fennel seeds, and 1 teaspoon of black peppercorns in a dry pan.
- Place the toasted spices in a sachet and steep it in the simmering milk along with the rice.
- Toast 0.5 cup of raisins in a dry pan for 1-2 minutes then soak them in 0.5 cup of amaro.
- Once the rice is cooked and most of the milk absorbed, remove the spice sachet and stir in the amaro-soaked raisins.
- Add an additional 0.5 cup of milk to achieve the desired creamy consistency before serving.
- Drizzle with syrup, sprinkle with additional cinnamon if desired, and serve warm or cold.
