Swedish Meatball Stew

Ingredients

  • 0.33 cup Panko bread crumbs
  • 0.5 cup Whole milk
  • 1 piece Free-range egg
  • 2 tablespoon Flat-leaf parsley minced
  • 2 tablespoon Dill minced
  • 2 clove Garlic cloves minced
  • 0.25 teaspoon Allspice
  • 0.25 teaspoon Nutmeg
  • 0.5 medium White onion finely chopped
  • 0.25 teaspoon Freshly cracked black pepper
  • 0.5 teaspoon Kosher salt
  • 1 pound Best quality ground beef
  • 0.5 pound Best quality ground pork
  • 0.25 cup Butter
  • 0.25 cup Flour
  • 3 cup Beef stock
  • 1 cup Heavy cream
  • 2 clove Garlic cloves minced
  • 0.5 lemon Lemon zest
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 0 pinch Sea salt
  • 1.5 pound Baby potatoes halved
  • 0 batch Smoked meatballs
  • 2 cup Cooked peas
  • 0.5 cup Crème fraîche
  • 0.25 cup Dill leaves
  • 0.25 cup Fresh chives minced
  • 0 crack Black pepper cracked

Instructions

  1. Preheat your Traeger Grill to 185 degrees F, using the super smoke option if available.
  2. In a bowl, mix together 1/3 cup panko bread crumbs and 1/2 cup whole milk. Let sit for 5 minutes.
  3. Add 1 free-range egg, 2 tablespoons of minced fresh flat-leaf parsley, 2 tablespoons minced dill, 2 minced garlic cloves, 1/4 teaspoon ground allspice, 1/4 teaspoon ground nutmeg, 1/2 medium onion finely chopped, 1/4 teaspoon freshly cracked black pepper, 1/2 teaspoon kosher salt, 1 pound ground beef, and 1/2 pound ground pork to the soaked breadcrumb mixture. Mix well and shape into meatballs.
  4. Place the meatballs on the preheated grill and smoke for 30 minutes to enhance their flavor.
  5. Heat a deep pan over medium heat and add 1/4 cup of butter. Once melted, whisk in 1/4 cup of flour and cook until the mixture is nutty in aroma.
  6. Add 2 cloves of minced garlic. Whisk in 3 cups of beef stock and 1 cup of heavy cream. Continue stirring to combine.
  7. Add the zest of 1/2 lemon, 1 tablespoon Worcestershire sauce, 1 teaspoon Dijon mustard, a pinch of sea salt, 1 1/2 pounds halved baby potatoes, and the smoked meatballs to the pan. Let it simmer until the sauce thickens and potatoes are tender.
  8. Once the potatoes are cooked through and the sauce thickens, plate up the stew with 2 cups of cooked peas, 1/2 cup of crème fraîche, 1/4 cup dill leaves, 1/4 cup minced fresh chives, and a crack or two of black pepper.
