Popo's Coconut Sago Pudding
A chewy, coconutty treat that's incredibly easy to make, addictive, and perfect for sharing with family any time of the year.

Ingredients
- 500 grams sago pearls small tapioca pearls
- 1000 ml water
- 3 tbsp milk powder
- 450 ml water
- 1 tsp vanilla extract
- 190 grams sugar
- 0 desiccated coconut to coat generously
Instructions
- Bring 4 cups of water to a boil in a pot. Add the sago pearls, reduce the heat to a simmer, and stir continuously to prevent the pearls from sticking to the bottom or burning.
- Once the sago has absorbed all the water and become translucent, gradually mix in the milk powder solution, stirring well after each addition to ensure it is fully combined.
- Stir in vanilla extract and sugar to taste. Adjust the sweetness as preferred.
- Pour the mixture into a lightly oiled tray, cover with cling film, and refrigerate overnight to set.
- Sprinkle desiccated coconut on a chopping board, then turn the set sago pudding onto it. Sprinkle more coconut on top to make handling easier.
- Slice the pudding into your desired shapes and coat each piece in desiccated coconut. Store in an airtight container in the fridge for up to 5 days.
