Spiced Roasted Sweet Potato Bean Hummus Bowls

Ingredients
- 2 lbs sweet potatoes peeled and chopped
- 1 red onion sliced
- 3 garlic crushed
- 15 oz butter beans drained and rinsed
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp oregano
- 0.5 tsp chili salt
- 2 tbsp olive oil
- 0 parchment paper
- 4 cups kale chopped
- 1 tbsp olive oil
- 0.25 tsp salt
- 1 cup tomatoes chopped
- 2 spring onion sliced
- 0.25 cup fresh mint chopped
- 0.5 cup hummus
- 2 tbsp lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop sweet potatoes into 1-inch chunks. Slice the red onion. Crush the garlic cloves.
- In a large bowl, combine sweet potatoes, red onion, garlic, butter beans, cumin, paprika, oregano, chili salt, and a drizzle of olive oil. Mix well to coat evenly.
- Spread the mixture onto a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes or until sweet potatoes are tender and caramelized.
- While the vegetables are roasting, prepare the salad by massaging kale with olive oil and a pinch of salt. Add chopped tomatoes, spring onion, and fresh mint.
- For the dressing, combine hummus with roasted garlic and fresh lemon juice. Mix until smooth.
- Serve the roasted sweet potato and bean mixture over the kale salad, and drizzle with the hummus dressing. Enjoy!
