Spiced Roasted Sweet Potato Bean Hummus Bowls

Ingredients

  • 2 lbs sweet potatoes peeled and chopped
  • 1 red onion sliced
  • 3 garlic crushed
  • 15 oz butter beans drained and rinsed
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 0.5 tsp chili salt
  • 2 tbsp olive oil
  • 0 parchment paper
  • 4 cups kale chopped
  • 1 tbsp olive oil
  • 0.25 tsp salt
  • 1 cup tomatoes chopped
  • 2 spring onion sliced
  • 0.25 cup fresh mint chopped
  • 0.5 cup hummus
  • 2 tbsp lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into 1-inch chunks. Slice the red onion. Crush the garlic cloves.
  3. In a large bowl, combine sweet potatoes, red onion, garlic, butter beans, cumin, paprika, oregano, chili salt, and a drizzle of olive oil. Mix well to coat evenly.
  4. Spread the mixture onto a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes or until sweet potatoes are tender and caramelized.
  5. While the vegetables are roasting, prepare the salad by massaging kale with olive oil and a pinch of salt. Add chopped tomatoes, spring onion, and fresh mint.
  6. For the dressing, combine hummus with roasted garlic and fresh lemon juice. Mix until smooth.
  7. Serve the roasted sweet potato and bean mixture over the kale salad, and drizzle with the hummus dressing. Enjoy!
