Chilaquiles in Salsa de Chorizo
A flavorful Mexican breakfast dish consisting of fried tortillas coated in a savory chorizo sauce, topped with eggs and delicious toppings.

Ingredients
- 14 tortillas cut into chips
- 1 cup vegetable oil for frying
- 0 tortilla chips crispy
- 1 tomato chopped
- 0.5 yellow onion chopped
- 2 serrano peppers chopped
- 0.25 cup cilantro chopped
- 12 oz chorizo cooked
- 1 tomato chopped
- 0.5 yellow onion chopped
- 2 serrano peppers chopped
- 1.5 cups water
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 tsp garlic powder
- 2 eggs cooked to liking
- 0.25 cup water
- 0.25 tsp salt
- 0.25 tsp black pepper
- 0.5 cup cheese shredded
- 0.5 cup sour cream optional
- 0.5 cup green salsa optional
- 0.5 cup queso fresco crumbled, optional
- 1 avocado optional, sliced
Instructions
- Cut 14 tortillas into chip-sized pieces.
- Heat vegetable oil in a pan and fry the tortilla pieces until crispy.
- Chop the tomato, yellow onion, serranos, and cilantro.
- Cook your favorite chorizo in a pan until done.
- Add chopped tomato, onion, and serranos to the cooked chorizo.
- Add cilantro, 1 1/2 cups of water, salt, black pepper, and garlic powder to the pan. Let it simmer.
- Cook two eggs to your liking with a splash of water for steam.
- Add crispy tortilla chips into the chorizo salsa and stir shortly before serving.
- Add cheese on top of the chilaquiles and cover until melted.
- Serve the chilaquiles topped with eggs. Optionally add sour cream, green salsa, queso fresco, and avocado.
