Rhubarb Fritters with Strawberry Glaze

Ingredients
- 2 cups rhubarb chopped into small pieces
- 0.5 cup sugar
- 3.5 cups all-purpose flour
- 1 packet yeast
- 0.25 cup sugar
- 1 cup milk
- 2 eggs beaten
- 1 tsp salt
- 0.5 cup butter softened
- 0 all-purpose flour for dusting
- 0 vegetable oil for frying
- 1.5 cups powdered sugar
- 0.5 cup strawberries pureed
- 2 tbsp butter melted
Instructions
- Prepare the rhubarb filling by cooking rhubarb with sugar until it breaks down into a jammy consistency.
- Make the yeasted dough by combining flour, yeast, sugar, milk, eggs, salt, and butter. Knead until a soft dough forms.
- Roll out the dough on a floured surface into a rectangle. Spread the rhubarb filling evenly across the dough.
- Roll the dough into a log, slice into pieces at opposing angles. Allow the slices to proof until doubled in size.
- Heat oil in a large pot to 350°F (175°C) and fry the fritters until golden brown and crisp.
- Prepare the strawberry glaze by whisking together powdered sugar, strawberry puree, and melted butter. Drizzle over the cooled fritters.
