Chicken Caesar Tortellini Pasta Salad
A delightful gluten-free chicken caesar tortellini pasta salad, perfect for a simple summer lunch or dinner. This dish combines the freshness of romaine, the heartiness of rotisserie chicken, and a no-mayo caesar dressing.

Ingredients
- 0.25 cup plain Greek yogurt
- 0.25 cup olive oil
- 0.33 cup grated Parmigiano-Reggiano
- 1 tbsp Dijon mustard
- 2 tsp red wine vinegar
- 1 tsp anchovy paste
- 4 cloves garlic cloves minced
- 0 salt and pepper to taste
- 16 oz gluten-free tortellini drained and rinsed with cold water
- 4 cups romaine lettuce chopped
- 2 tbsp gluten-free bread crumbs
- 1 tsp butter
- 2 cups shredded rotisserie chicken
- 0.5 cup microgreens
- 0 grated Parmesan cheese for serving
Instructions
- Use an immersion blender or food processor to blend ingredients into a smooth dressing. Set aside.
- Cook tortellini and prep romaine. Set both aside.
- Add 1 tsp of butter to a small pan over medium heat. Toast breadcrumbs for a few minutes, until browned but not burnt. Remove from heat and set aside.
- Toss romaine, chicken, and microgreens with 1/2 of the dressing. Add tortellini, remaining dressing, and bread crumbs. Gently toss to combine. Top with grated parm and serve!
