Chicken Caesar Tortellini Pasta Salad

Chicken Caesar Tortellini Pasta Salad

Ingredients

  • 0.25 cup plain Greek yogurt
  • 0.25 cup olive oil
  • 0.33 cup grated Parmigiano-Reggiano
  • 1 tbsp Dijon mustard
  • 2 tsp red wine vinegar
  • 1 tsp anchovy paste
  • 4 cloves garlic cloves minced
  • 0 salt and pepper to taste
  • 16 oz gluten-free tortellini drained and rinsed with cold water
  • 4 cups romaine lettuce chopped
  • 2 tbsp gluten-free bread crumbs
  • 1 tsp butter
  • 2 cups shredded rotisserie chicken
  • 0.5 cup microgreens
  • 0 grated Parmesan cheese for serving

Instructions

  1. Use an immersion blender or food processor to blend ingredients into a smooth dressing. Set aside.
  2. Cook tortellini and prep romaine. Set both aside.
  3. Add 1 tsp of butter to a small pan over medium heat. Toast breadcrumbs for a few minutes, until browned but not burnt. Remove from heat and set aside.
  4. Toss romaine, chicken, and microgreens with 1/2 of the dressing. Add tortellini, remaining dressing, and bread crumbs. Gently toss to combine. Top with grated parm and serve!
