Honey Gochujang Chicken Kebabs

Delicious, protein-rich chicken kebabs marinated with honey and gochujang, served with pickled veggies and toasted flatbreads. A perfect combination of sweet, tangy, and savory flavors.

Honey Gochujang Chicken Kebabs

Ingredients

  • 10.6 oz chicken thinly sliced
  • 0.5 tsp paprika
  • 0.06 tsp black pepper pinch
  • 0.5 tbsp gochujang paste
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp honey
  • 1 tsp garlic chopped
  • 1 tsp ginger chopped
  • 0.5 small red onion sliced
  • 0.25 whole cucumber sliced
  • 1.7 oz distilled vinegar
  • 6.8 oz warm water
  • 0 skewers
  • 1.4 oz lighter mayo
  • 0.25 tsp gochujang paste
  • 1 tsp rice wine vinegar
  • 0.06 tsp salt pinch
  • 2 flatbreads
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 0 sesame seeds

Instructions

  1. Season the chicken with paprika and black pepper.
  2. Add gochujang paste, soy sauce, rice wine vinegar, honey, chopped garlic, and ginger. Mix well and leave to marinate for 30 minutes.
  3. Make the pickled veggies by mixing all listed ingredients in a bowl.
  4. Thread the marinated chicken onto skewers. If using wooden skewers, soak them for 30 minutes first.
  5. Air fry the skewers at 200°C (392°F) for 12-14 minutes or bake at the same temperature for 15-17 minutes, rotating them partway through cooking.
  6. Make the gochujang mayo by mixing all ingredients.
  7. Toast the flatbreads and spread gochujang mayo over them. Top with the pickled veggies.
  8. Mix honey and soy sauce together and brush this over the cooked kebabs. Scatter sesame seeds to garnish.
