Honey Mustard Grilled Chicken with Peach Salad

Ingredients
- 0.5 cup honey
- 0.5 cup whole-grain mustard or Dijon mustard
- 2 tablespoon extra-virgin olive oil
- 0.25 cup lemon juice from 2 lemons
- 0.25 cup fresh cilantro finely chopped
- 1 clove garlic grated
- 1 tablespoon curry powder
- 1 teaspoon kosher salt
- 0.5 teaspoon freshly cracked black pepper
- 1 teaspoon crushed red pepper flakes
- 2.5 pounds boneless, skinless chicken thighs
- 6 Persian cucumbers cut into 1½-inch pieces
- 2 peaches pitted and thinly sliced
- 0.5 cup fresh cilantro loosely packed and chopped
- 0.5 cup fresh mint leaves roughly chopped
- 0.25 cup lemon juice from 2 lemons
- 0.5 teaspoon kosher salt
Instructions
- Prepare the honey mustard marinade by mixing honey, whole-grain mustard, olive oil, lemon juice, cilantro, grated garlic, curry powder, kosher salt, and freshly cracked black pepper in a bowl.
- Reserve a portion of the marinade to use as a dressing for the salad.
- Add chicken thighs to the remaining marinade. Toss to coat and let sit for at least 15 minutes.
- Preheat the grill to medium heat. Grill the chicken until fully cooked and crispy on the outside, about 6-8 minutes per side.
- Prepare the peach salad by smashing cucumbers and slicing peaches. Combine them with chopped cilantro, mint, and reserved marinade.
- Serve the grilled chicken topped with the peach salad. Garnish with additional mint and cilantro if desired.
