Oven Baked Crispy Cod
Crispy oven baked cod with a tangy tartar sauce. A gluten-free and dairy-free twist on classic fish sticks perfect for family dinners.

Ingredients
- 0 cooking spray
- 0 parchment paper optional, for lining
- 2 cups gluten free panko breadcrumbs
- 2 tbsp dried Italian seasoning
- 1 tsp salt for breadcrumb mixture
- 1 tsp garlic powder
- 2 eggs
- 6 4 oz cod filets
- 0 salt for seasoning fish
- 0 cooking spray
- 0.5 cup mayonnaise
- 1 tbsp fresh dill finely chopped
- 0.25 cup pickles chopped
- 1 tbsp pickle juice
- 1 tbsp lemon juice
- 0.25 tsp salt
Instructions
- Preheat oven to 425°F and spray a baking rack with cooking spray or line with parchment.
- Blitz panko in a blender until fine like flour before adding to a medium-sized bowl with Italian seasoning, garlic powder, and 1 tsp salt. Mix well.
- Whisk eggs in a separate bowl.
- Season each cod filet with salt, dredge in panko mixture, shake off excess, then dredge in egg. Allow excess egg to drip off before a second dredging in panko. Shake off excess panko.
- Transfer coated cod to prepared baking rack and spray generously with cooking spray.
- Bake cod for 13-15 minutes until cooked through. Optionally, broil for the last 2 minutes for a deeper golden color.
- Combine mayonnaise, fresh dill, chopped pickles, pickle juice, lemon juice, and salt in a small bowl for the tartar sauce. Mix well.
