Thai Drunken Noodles (Pad Kee Mao)

Ingredients
- 8 oz fresh rice noodles separated
- 1 bunch Chinese broccoli chopped
- 1 medium carrot chopped
- 0.5 cup onion chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp fish sauce
- 1 tsp sugar
- 8 oz shrimp peeled and deveined
- 3 cloves garlic minced
- 2 small chilies sliced
- 0.5 cup Thai basil fresh leaves
Instructions
- Separate the fresh rice noodles.
- Chop the Chinese broccoli, carrots, and onions.
- Mix soy sauce, oyster sauce, fish sauce, and sugar together.
- Cook the shrimp until just cooked through, then remove and set aside.
- Add garlic, chilies, onions, carrots, Chinese broccoli, and Thai basil to the pan and cook until vibrant.
- Add rice noodles and pour the sauce over, tossing to combine.
- Add back the cooked shrimp and gently toss everything together. Serve immediately.
