Blueberry Lemon Cheesecake Cookies

Ingredients
- 1 sheet parchment paper
- 2.5 cups flour
- 1 teaspoon baking powder
- 0.25 teaspoon salt
- 0.5 cup butter softened
- 1 cup sugar
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup blueberries
- 4 ounces cream cheese softened
- 0.25 cup sugar
- 0.5 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together flour, baking powder, and a pinch of salt.
- In another bowl, beat butter and sugar until light and fluffy. Add lemon zest and vanilla extract.
- Gradually add the flour mixture to the butter mixture and mix until just combined.
- Fold in the blueberries gently to avoid crushing them.
- In a small bowl, mix cream cheese with sugar and vanilla extract for the filling.
- Scoop out a tablespoon of cookie dough, flatten it slightly, and place a small spoonful of cream cheese filling in the center. Fold the edges of the dough around the filling and seal.
- Place the cookies on the prepared baking sheet, leaving space between them. Bake for 12-15 minutes or until edges are lightly golden.
