Blueberry Lemon Cheesecake Cookies

Ingredients

  • 1 sheet parchment paper
  • 2.5 cups flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup butter softened
  • 1 cup sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • 4 ounces cream cheese softened
  • 0.25 cup sugar
  • 0.5 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together flour, baking powder, and a pinch of salt.
  3. In another bowl, beat butter and sugar until light and fluffy. Add lemon zest and vanilla extract.
  4. Gradually add the flour mixture to the butter mixture and mix until just combined.
  5. Fold in the blueberries gently to avoid crushing them.
  6. In a small bowl, mix cream cheese with sugar and vanilla extract for the filling.
  7. Scoop out a tablespoon of cookie dough, flatten it slightly, and place a small spoonful of cream cheese filling in the center. Fold the edges of the dough around the filling and seal.
  8. Place the cookies on the prepared baking sheet, leaving space between them. Bake for 12-15 minutes or until edges are lightly golden.
