Spinach Salad with Bacon & Hard-Boiled Eggs

Ingredients
- 6 slices bacon cooked and crumbled
- 4 units egg hard-boiled and sliced
- 1 cup cherry tomatoes sliced
- 0.5 cup red onion thinly sliced
- 1 avocado diced
- 0.25 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon soy sauce
- 1 tablespoon water
- 1 clove garlic minced
- 0.5 teaspoon Italian seasoning
- 0.5 teaspoon dried dill
- 4 cups baby spinach
Instructions
- Cook the bacon until crispy. Once cooked, crumble it into small pieces.
- Hard-boil the eggs. Peel and slice them.
- Slice the cherry tomatoes and red onion. Dice the avocado.
- Prepare the red wine vinaigrette by mixing olive oil, red wine vinegar, soy sauce, water, minced garlic, Italian seasoning, and dried dill in a small bowl.
- In a large bowl, combine baby spinach, sliced hard-boiled eggs, bacon bits, cherry tomatoes, red onion, and avocado. Drizzle with vinaigrette and toss gently to combine.
