Chipotle Pineapple Chicken with Bang Bang Sauce
Chicken marinated in a chipotle tomato sauce and roasted with sweet pineapple chunks. Served with a creamy bang bang sauce for a delightful, tropical-inspired meal.

Ingredients
- 0.33 cup tamari
- 0.25 cup rice vinegar
- 3 tbsp honey
- 2 tbsp tomato paste
- 2 chipotle chiles in adobo use more for extra spice
- 1 tbsp paprika
- 1 tbsp fresh thyme
- 4 clove garlic
- 2 lb chicken breasts or thighs
- 3 cup fresh pineapple chunks
- 2 tbsp cold, salted butter
- 2 tbsp sesame seeds
- 0.5 cup mayo
- 0.33 cup sweet Thai chili sauce
- 1 clove garlic grated
- 2 tsp lime zest
- 0 cup rice
- 1 avocado sliced
- 0 sesame seeds
Instructions
- Prepare the chipotle sauce by combining tamari, rice vinegar, honey, tomato paste, chipotle chiles, paprika, thyme, and garlic in a blender. Blend until smooth.
- Place chicken on a prepared baking sheet, then pour the blended chipotle sauce over it. Add fresh pineapple chunks around the chicken.
- Dot the chicken and pineapple with slices of cold, salted butter and sprinkle sesame seeds over the top.
- Bake the chicken and pineapple in a preheated oven at 400°F (200°C) for 25-30 minutes, or until the chicken is cooked through and pineapple is caramelized.
- While the chicken bakes, prepare the bang bang sauce by mixing mayo, sweet Thai chili sauce, grated garlic, and lime zest.
- Serve the roasted chicken and pineapple over rice, topped with bang bang sauce and additional sesame seeds. Garnish with sliced avocado.
