Chipotle Pineapple Chicken with Bang Bang Sauce

Chicken marinated in a chipotle tomato sauce and roasted with sweet pineapple chunks. Served with a creamy bang bang sauce for a delightful, tropical-inspired meal.

Chipotle Pineapple Chicken with Bang Bang Sauce

Ingredients

  • 0.33 cup tamari
  • 0.25 cup rice vinegar
  • 3 tbsp honey
  • 2 tbsp tomato paste
  • 2 chipotle chiles in adobo use more for extra spice
  • 1 tbsp paprika
  • 1 tbsp fresh thyme
  • 4 clove garlic
  • 2 lb chicken breasts or thighs
  • 3 cup fresh pineapple chunks
  • 2 tbsp cold, salted butter
  • 2 tbsp sesame seeds
  • 0.5 cup mayo
  • 0.33 cup sweet Thai chili sauce
  • 1 clove garlic grated
  • 2 tsp lime zest
  • 0 cup rice
  • 1 avocado sliced
  • 0 sesame seeds

Instructions

  1. Prepare the chipotle sauce by combining tamari, rice vinegar, honey, tomato paste, chipotle chiles, paprika, thyme, and garlic in a blender. Blend until smooth.
  2. Place chicken on a prepared baking sheet, then pour the blended chipotle sauce over it. Add fresh pineapple chunks around the chicken.
  3. Dot the chicken and pineapple with slices of cold, salted butter and sprinkle sesame seeds over the top.
  4. Bake the chicken and pineapple in a preheated oven at 400°F (200°C) for 25-30 minutes, or until the chicken is cooked through and pineapple is caramelized.
  5. While the chicken bakes, prepare the bang bang sauce by mixing mayo, sweet Thai chili sauce, grated garlic, and lime zest.
  6. Serve the roasted chicken and pineapple over rice, topped with bang bang sauce and additional sesame seeds. Garnish with sliced avocado.
