Spicy Mediterranean Chicken with Creamy Cucumber Salad

Ingredients
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 3 cloves garlic minced
- 2 teaspoons smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon cayenne powder
- 2 tablespoons olive oil
- 8 boneless skinless chicken thighs
- 4 Persian cucumbers
- 0.5 red onion chopped
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 clove garlic minced
- 2 tablespoons fresh dill chopped
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup feta cheese crumbled
Instructions
- Prepare the marinade by mixing lemon juice, lemon zest, minced garlic, smoked paprika, dried oregano, cumin, salt, black pepper, cayenne powder, and olive oil in a large bowl.
- Add the boneless skinless chicken thighs to the marinade, ensuring they are fully coated. Let them marinate for at least 15 minutes.
- Preheat the grill to medium-high heat. Grill the chicken thighs for about 6-7 minutes on each side or until fully cooked.
- While the chicken is grilling, prepare the cucumber salad by dicing Persian cucumbers and chopping red onion. Mix with plain Greek yogurt, lemon juice, minced garlic, chopped fresh dill, salt, and black pepper.
- Serve each grilled chicken thigh with a generous portion of the cucumber salad and sprinkle with feta cheese.
