Indian Vodka Pasta
A fusion of Indian spices and vodka to create a creamy, spicy and rich pasta dish.

Ingredients
- 1 cup cashew nuts soaked for cream
- 0 water enough to cover cashew nuts
- 200 grams pasta
- 2 tbsp garlic minced
- 1 large white onion chopped
- 1 tsp turmeric
- 0.5 tsp salt
- 1 tbsp chilli garlic paste
- 1.75 tbsp tomato paste
- 2 tbsp mixed herbs
- 65 ml vodka
- 0 cashew nuts blitzed into cream
- 0 parsley for garnish
Instructions
- Place a handful of cashew nuts in hot water and let them soak. Follow the boiling pasta instructions on the package.
- In the meantime, sauté garlic and onion until the onions are slightly translucent.
- Add turmeric, salt, chili garlic paste, tomato paste, and mixed herbs to the onion and garlic mixture. Mix well.
- Pour in the vodka on medium heat. It should slowly burn off as you keep mixing.
- Blitz the soaked cashew nuts until they form a cream consistency. Pour into the vodka mixture and mix well until it forms a creamy sauce.
- Add the cooked, al dente pasta to the creamy vodka sauce; stir well over low heat. Garnish with parsley.
