Indian Vodka Pasta

A fusion of Indian spices and vodka to create a creamy, spicy and rich pasta dish.

Indian Vodka Pasta

Ingredients

  • 1 cup cashew nuts soaked for cream
  • 0 water enough to cover cashew nuts
  • 200 grams pasta
  • 2 tbsp garlic minced
  • 1 large white onion chopped
  • 1 tsp turmeric
  • 0.5 tsp salt
  • 1 tbsp chilli garlic paste
  • 1.75 tbsp tomato paste
  • 2 tbsp mixed herbs
  • 65 ml vodka
  • 0 cashew nuts blitzed into cream
  • 0 parsley for garnish

Instructions

  1. Place a handful of cashew nuts in hot water and let them soak. Follow the boiling pasta instructions on the package.
  2. In the meantime, sauté garlic and onion until the onions are slightly translucent.
  3. Add turmeric, salt, chili garlic paste, tomato paste, and mixed herbs to the onion and garlic mixture. Mix well.
  4. Pour in the vodka on medium heat. It should slowly burn off as you keep mixing.
  5. Blitz the soaked cashew nuts until they form a cream consistency. Pour into the vodka mixture and mix well until it forms a creamy sauce.
  6. Add the cooked, al dente pasta to the creamy vodka sauce; stir well over low heat. Garnish with parsley.
