Ginger-Basil Beef and Zucchini Skillet

Ingredients

  • 3 Tbsp vegetable or canola oil or any preferred cooking oil
  • 1 lb lean ground beef
  • 0 kosher salt
  • 0 black pepper
  • 1 lb zucchini
  • 1 medium shallot
  • 3 Tbsp fresh ginger minced
  • 3 garlic cloves minced
  • 0.25 cup lower-sodium soy sauce
  • 2 Tbsp unseasoned rice vinegar
  • 1 Tbsp fish sauce
  • 1 Tbsp Gochujang
  • 1 cup fresh basil leaves torn
  • 0 white rice or lettuce cups for serving

Instructions

  1. Heat 2 to 3 tablespoons of oil in a large skillet over medium-high heat.
  2. Add 1 pound of lean ground beef and season with salt and pepper. Cook until browned.
  3. Slice 1 pound of zucchini and 1 medium shallot, then add to the skillet. Stir and cook until zucchini is just tender.
  4. Add 3 tablespoons of minced fresh ginger and 3 minced garlic cloves. Cook until fragrant.
  5. Pour in 1/4 cup of lower-sodium soy sauce or tamari, 2 tablespoons of unseasoned rice vinegar, 1 tablespoon of fish sauce, and 1 tablespoon of Gochujang. Stir well.
  6. Fold in 1 cup of torn fresh basil leaves until just wilted, and remove skillet from heat. Serve over cooked rice or in lettuce cups.
