One-Pot Harissa Shrimp Orzo

Ingredients
- 3 Tbsp. extra-virgin olive oil
- 0.5 cup shallots chopped
- 3 cloves garlic minced or thinly sliced
- 2 Tbsp. harissa
- 1.5 cups orzo pasta
- 3 cups vegetable broth
- 14.5 oz. fire-roasted diced tomatoes
- 1 lb. shrimp raw peeled and deveined
- 0 kosher salt to taste
- 0 black pepper to taste
- 3.5 cups baby spinach
- 0.33 cup feta cheese crumbled
- 1 lemon juiced
- 0 parsley chopped for garnish
- 0 french bread or warm pita, for serving
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Add the shallots and garlic to the pot, and sauté until the shallots are translucent.
- Stir in the harissa and cook for another minute to release its flavors.
- Add the orzo to the pot, stirring to coat in the oil and harissa.
- Pour in the vegetable broth and fire-roasted tomatoes, then bring to a boil.
- Reduce the heat to a simmer and cook the orzo until tender, about 8-10 minutes.
- Add the shrimp to the pot and season with salt and pepper; cook until the shrimp are pink and opaque.
- Stir in the fresh baby spinach until wilted.
- Finish the dish by stirring in the crumbled feta cheese and squeezing fresh lemon juice over the top.
- Garnish with fresh parsley and extra feta cheese before serving with crusty bread or warm pita.
