One-Pot Harissa Shrimp Orzo

Ingredients

  • 3 Tbsp. extra-virgin olive oil
  • 0.5 cup shallots chopped
  • 3 cloves garlic minced or thinly sliced
  • 2 Tbsp. harissa
  • 1.5 cups orzo pasta
  • 3 cups vegetable broth
  • 14.5 oz. fire-roasted diced tomatoes
  • 1 lb. shrimp raw peeled and deveined
  • 0 kosher salt to taste
  • 0 black pepper to taste
  • 3.5 cups baby spinach
  • 0.33 cup feta cheese crumbled
  • 1 lemon juiced
  • 0 parsley chopped for garnish
  • 0 french bread or warm pita, for serving

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the shallots and garlic to the pot, and sauté until the shallots are translucent.
  3. Stir in the harissa and cook for another minute to release its flavors.
  4. Add the orzo to the pot, stirring to coat in the oil and harissa.
  5. Pour in the vegetable broth and fire-roasted tomatoes, then bring to a boil.
  6. Reduce the heat to a simmer and cook the orzo until tender, about 8-10 minutes.
  7. Add the shrimp to the pot and season with salt and pepper; cook until the shrimp are pink and opaque.
  8. Stir in the fresh baby spinach until wilted.
  9. Finish the dish by stirring in the crumbled feta cheese and squeezing fresh lemon juice over the top.
  10. Garnish with fresh parsley and extra feta cheese before serving with crusty bread or warm pita.
