Blueberry Custard Pie

Ingredients

  • 3 cups blueberries
  • 0.75 cup granulated sugar
  • 0.5 cup all-purpose flour
  • 3 eggs
  • 0.75 cup sour cream
  • 0 pinch salt
  • 0 tsp vanilla extract a couple of teaspoons
  • 0.25 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.5 cup all-purpose flour
  • 0.25 cup butter cold, cut into small pieces
  • 1 tsp cinnamon
  • 0.125 tsp nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the unbaked 9-inch pie crust on a baking sheet.
  3. Fill the pie crust with 3 cups of fresh blueberries.
  4. In a bowl, whisk together 3/4 cup of granulated sugar, 1/2 cup of all-purpose flour, 3 eggs, 3/4 cup of sour cream, a pinch of salt, and a couple tsp of vanilla extract to form the custard.
  5. Pour the custard mixture over the blueberries in the pie crust.
  6. In another bowl, combine 1/4 cup brown sugar, 1/4 cup granulated sugar, 1/2 cup flour, 1/4 cup cold butter cut into small pieces, 1 tsp cinnamon, and 1/8 tsp nutmeg to make the topping.
  7. Sprinkle the topping evenly over the custard and blueberries.
  8. Bake the pie in the preheated oven for about 1 hour and 10 minutes, until the custard is set and the top is golden brown.
  9. Allow the pie to cool completely before serving.
