Ingredients
- 1 sheet parchment paper
- 1.5 cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 2 pieces peaches thinly sliced
- 1 tablespoon all-purpose flour
- 0.5 cup unsalted butter
- 1 cup granulated sugar
- 2 large egg
- 2 teaspoons vanilla extract
- 0.5 cup whole milk
- 0.5 cup cinnamon sugar filling to be prepared with 1/2 cup sugar and 2-3 tsp cinnamon
- 0.5 cup powdered sugar
- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F and line a loaf pan with parchment paper.
- In a medium bowl, sift together 1 1/2 cups all-purpose flour, 1 teaspoon cinnamon, 1 teaspoon baking powder, and 1/2 teaspoon salt. Set aside.
- In a small bowl, mix the sliced peaches with 1-2 tablespoons of flour until they are coated. Set aside.
- In a separate bowl, cream together 1/2 cup unsalted butter and 1 cup granulated sugar until light and fluffy, about 3 to 5 minutes.
- Beat in 2 large eggs and 2 teaspoons vanilla extract. Gradually add the dry mixture in. Slowly add in 1/2 cup whole milk and once the batter comes together, scrape the sides of the bowl. Fold in the peaches.
- Pour half of the batter into the prepared pan then sprinkle half of the cinnamon sugar filling on top. Swirl it in with a knife. Repeat with the rest of the batter and filling.
- Bake for 65-75 minutes. The top of the loaf will be cracked, raised, golden brown in color, and firm to the touch. A toothpick inserted into the center of the loaf should come out clean once ready.
- Let loaf cool, then top with glaze by mixing 1/2 cup powdered sugar and 2-3 tablespoons milk until it reaches your desired consistency.
