Cinnamon Peach Loaf

Cinnamon Peach Loaf

Ingredients

  • 1 sheet parchment paper
  • 1.5 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 pieces peaches thinly sliced
  • 1 tablespoon all-purpose flour
  • 0.5 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large egg
  • 2 teaspoons vanilla extract
  • 0.5 cup whole milk
  • 0.5 cup cinnamon sugar filling to be prepared with 1/2 cup sugar and 2-3 tsp cinnamon
  • 0.5 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F and line a loaf pan with parchment paper.
  2. In a medium bowl, sift together 1 1/2 cups all-purpose flour, 1 teaspoon cinnamon, 1 teaspoon baking powder, and 1/2 teaspoon salt. Set aside.
  3. In a small bowl, mix the sliced peaches with 1-2 tablespoons of flour until they are coated. Set aside.
  4. In a separate bowl, cream together 1/2 cup unsalted butter and 1 cup granulated sugar until light and fluffy, about 3 to 5 minutes.
  5. Beat in 2 large eggs and 2 teaspoons vanilla extract. Gradually add the dry mixture in. Slowly add in 1/2 cup whole milk and once the batter comes together, scrape the sides of the bowl. Fold in the peaches.
  6. Pour half of the batter into the prepared pan then sprinkle half of the cinnamon sugar filling on top. Swirl it in with a knife. Repeat with the rest of the batter and filling.
  7. Bake for 65-75 minutes. The top of the loaf will be cracked, raised, golden brown in color, and firm to the touch. A toothpick inserted into the center of the loaf should come out clean once ready.
  8. Let loaf cool, then top with glaze by mixing 1/2 cup powdered sugar and 2-3 tablespoons milk until it reaches your desired consistency.
