Summer Roll Chicken
Delicious and healthy summer rolls filled with seasoned chicken breast, fresh vegetables, and served with a creamy peanut butter sauce. Refined sugar-free and perfect for a light meal.

Ingredients
- 1.2 lb Thinly sliced chicken breast
- 0.125 tsp Ginger powder
- 0 Black pepper Pinch
- 0.25 tsp Garlic powder
- 0.25 tsp Salt
- 0 Avocado oil
- 1 tbsp Low-sodium soy sauce
- 0.333 cup Natural unsweetened peanut butter
- 2 tbsp Raw honey
- 1 tbsp Low-sodium soy sauce
- 2 tsp Lime juice
- 1 tsp Garlic powder
- 1 tsp Ginger powder
- 0.5 cup Water
- 0.125 tsp Sesame oil
- 1 Cucumber Thinly sliced
- 1 Red bell pepper Thinly sliced
- 1 Avocado Thinly sliced
- 1 Shredded carrots
- 1 Shredded lettuce
- 0 Mint leaves
- 0 Cilantro
- 0 Rice paper sheets
Instructions
- Season the thin chicken fillets with ginger powder, black pepper, garlic powder, and salt.
- Cook the seasoned chicken fillets in a pan with avocado oil and low-sodium soy sauce until cooked through. Set aside to cool, then chop into strips.
- Combine all the peanut sauce ingredients. Gradually add the water while whisking until you achieve a creamy consistency.
- Prepare all vegetables: thinly slice the cucumber, red bell pepper, and avocado. Shred the carrots and lettuce. Set aside fresh mint leaves and cilantro.
- Prepare a shallow dish of water. Dip one sheet of rice paper in the water for just a moment and lay it flat.
- Place avocado slices on the rice paper, followed by chicken strips, vegetables, and herbs (mint, cilantro). Carefully roll it up like a burrito.
- Serve the summer rolls with the prepared peanut sauce for dipping.
