Spicy Lemon Basil Chicken
A riff on chicken francese with a spicy kick, featuring a delicious lemon basil butter sauce.

Ingredients
- 2 pieces chicken breasts
- 0.25 cup flour
- 0.33 cup parmigiano reggiano grated
- 0 to taste salt
- 0 to taste black pepper
- 0.5 lemons cut into wheels and then halved
- 0.5 tsp sugar
- 0 as needed olive oil
- 0 a pinch salt
- 0 as needed olive oil
- 1 shallot brunoise
- 2 cloves garlic cloves minced
- 2 Fresno chiles minced
- 0.33 cup white wine
- 8 oz chicken broth
- 1 from 1 lemon lemon zest
- 2 tsp honey
- 1 tsp soy sauce
- 0.5 lemon juiced
- 0 caramelized lemons
- 12 leaves basil leaves
- 2 tbsp chives
- 5 tbsp unsalted butter
- 0 chives for topping
- 0 basil leaves for topping
- 0 parmigiano reggiano grated, for topping
- 0 black pepper
Instructions
- Slice the chicken breasts lengthwise in half, then pound them until thin.
- Mix flour with grated parmigiano reggiano, salt, and pepper.
- Coat the chicken in the flour mixture and let it sit.
- Caramelize lemon slices with olive oil, sugar, and a little salt.
- Fry the chicken in olive oil until golden brown.
- In another pan, sauté shallots, garlic, and Fresno chiles in olive oil, then deglaze with white wine.
- Add chicken broth, lemon zest, honey, and soy sauce. Simmer until reduced by half.
- Add lemon juice, chopped caramelized lemons, basil, and chives. Cook for 2 more minutes.
- Turn off the heat and add unsalted butter to the sauce.
- Serve the chicken with the sauce, garnishing with additional chives, basil, grated parm, and black pepper.
