Caramelized Onion and Garlic Spaghetti

Ingredients

  • 8 oz pasta spaghetti
  • 0 tsp salt to taste
  • 0 cups water
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 large onion thinly sliced
  • 4 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp chili crisp
  • 1 tbsp soy sauce optional
  • 1 cup coconut milk or heavy cream, room temperature
  • 0.5 cup Parmesan cheese grated

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente.
  2. Reserve ½ cup of pasta water, then drain and set pasta aside.
  3. In a large skillet, heat 1 tbsp olive oil and 2 tbsp butter over medium-low heat.
  4. Add the thinly sliced onion and a pinch of salt. Cook slowly for about 12–15 minutes, stirring often, until onions are soft and deeply golden. (Lower the heat if they start to brown too quickly.)
  5. Stir in the minced garlic and cook for 1–2 minutes until fragrant.
  6. Add paprika, garlic powder, black pepper, Italian seasoning, and chili crisp. Stir well to combine.
  7. Add 1 tbsp soy sauce (optional) to deepen the flavor and lightly deglaze the pan.
  8. Pour in the cream or coconut milk and stir gently to combine. Let it simmer for 2–3 minutes until slightly thickened.
  9. Stir in the grated Parmesan cheese until melted and the sauce is creamy.
  10. Add the cooked spaghetti and toss everything together, adding a splash of reserved pasta water as needed to loosen the sauce and help it coat the spaghetti.
  11. Serve warm and enjoy.
