Thousand Layer Apple Cake
A heavenly French-style apple cake with layers of thinly sliced apples in a simple, creamy batter.

Ingredients
- 4 pieces eggs
- 0.67 cup sugar white sugar
- 0.75 cup milk
- 50 grams butter melted
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 0.25 teaspoon nutmeg
- 0.25 teaspoon salt fine salt
- 5 pieces apple
- 0 butter for greasing
- 0 parchment paper
- 30 grams butter cubed
- 3 tablespoons brown sugar
- 0 vanilla gelato for serving
- 0 cajeta for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, whisk together 4 eggs, 2/3 cup of sugar, 3/4 cup of milk, 50 grams (1/4 cup) of melted butter, and 1 teaspoon of vanilla.
- In another bowl, mix 1 cup of flour, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of fine salt. Slowly add the dry ingredients to the wet mixture, whisking until smooth.
- Peel 4 to 5 apples and slice them thinly using a mandoline or a sharp knife. Soak in lemon water to prevent oxidation.
- Lightly butter a baking pan and line with parchment paper. Layer apple slices on the bottom, followed by a layer of batter, pressing gently. Repeat until the pan is 3/4 full.
- Top the cake with 30 grams of cubed butter and 3 tablespoons of brown sugar. Bake for 65-75 minutes until a skewer inserted into the cake comes out clean.
- Let the cake cool in the pan for 10 minutes. Run a knife around the edges, then let it cool for another 2 hours before removing from the pan.
- Serve with a scoop of vanilla gelato and a drizzle of cajeta.
