Sweet Caramelized Pork Belly (Hong Shao Rou)

Ingredients

  • 1.5 lbs pork belly slab
  • 1 tbsp rock sugar can substitute with granulated or brown sugar
  • 0 pork belly
  • 1 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 4 tbsp Shaoxing wine
  • 0 water

Instructions

  1. Cut the pork belly into 1-inch cubes.
  2. Heat the rock sugar in a pan until it caramelizes to a nice reddish-brown color.
  3. Add the pork belly cubes into the caramelized sugar and coat them evenly in the sauce.
  4. Add the dark soy sauce, light soy sauce, and Shaoxing wine to the pan.
  5. Pour enough water into the pan to cover the pork belly.
  6. Let the mixture boil and allow the sauce to reduce until the meat is tender.
