One-Pot Tomato Chicken Garlic Pasta

Ingredients

  • 2 tablespoons olive oil
  • 1 lb chicken breast boneless, bite-sized
  • 0 salt
  • 0 black pepper
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 lb chicken breast boneless, bite-sized
  • 3 garlic minced
  • 8 cherry tomatoes
  • 2 tablespoons sun-dried tomatoes
  • 2 cups chicken broth
  • 8 oz pasta penne, rigatoni, Ditalini, or spaghetti
  • 1 handful spinach
  • 0.5 cup heavy cream or milk
  • 0.25 cup Parmesan cheese grated
  • 0 parsley freshly chopped

Instructions

  1. Heat 2 tablespoons of olive oil in a large pan over medium heat.
  2. Season 1 lb of chicken breast pieces with salt, black pepper, 1 tsp paprika, 1 tsp cayenne pepper, 1 tsp onion powder, and 1 tsp garlic powder.
  3. Add seasoned chicken to the pan and cook until golden brown, about 5-7 minutes.
  4. Add 2-3 cloves of garlic, 6-8 cherry tomatoes, and 2 tablespoons of sun-dried tomatoes to the pan. Stir and cook for 2-3 minutes until fragrant.
  5. Pour in 2 cups of chicken broth or water and bring to a simmer. Add 8 oz of pasta (penne, rigatoni, Ditalini or spaghetti) and cook according to pasta package instructions until al dente.
  6. Stir in a handful of spinach and ½ cup of heavy cream or milk to the pasta. Cook for an additional 2 minutes until spinach is wilted and the sauce is creamy.
  7. Remove from heat and stir in ¼ cup of grated Parmesan cheese.
  8. Garnish with freshly chopped parsley and serve while hot.
