One-Pot Tomato Chicken Garlic Pasta

Ingredients
- 2 tablespoons olive oil
- 1 lb chicken breast boneless, bite-sized
- 0 salt
- 0 black pepper
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 lb chicken breast boneless, bite-sized
- 3 garlic minced
- 8 cherry tomatoes
- 2 tablespoons sun-dried tomatoes
- 2 cups chicken broth
- 8 oz pasta penne, rigatoni, Ditalini, or spaghetti
- 1 handful spinach
- 0.5 cup heavy cream or milk
- 0.25 cup Parmesan cheese grated
- 0 parsley freshly chopped
Instructions
- Heat 2 tablespoons of olive oil in a large pan over medium heat.
- Season 1 lb of chicken breast pieces with salt, black pepper, 1 tsp paprika, 1 tsp cayenne pepper, 1 tsp onion powder, and 1 tsp garlic powder.
- Add seasoned chicken to the pan and cook until golden brown, about 5-7 minutes.
- Add 2-3 cloves of garlic, 6-8 cherry tomatoes, and 2 tablespoons of sun-dried tomatoes to the pan. Stir and cook for 2-3 minutes until fragrant.
- Pour in 2 cups of chicken broth or water and bring to a simmer. Add 8 oz of pasta (penne, rigatoni, Ditalini or spaghetti) and cook according to pasta package instructions until al dente.
- Stir in a handful of spinach and ½ cup of heavy cream or milk to the pasta. Cook for an additional 2 minutes until spinach is wilted and the sauce is creamy.
- Remove from heat and stir in ¼ cup of grated Parmesan cheese.
- Garnish with freshly chopped parsley and serve while hot.
