One Pan Sumac Salmon with Golden Rice

Ingredients

  • 1 Tbsp Sumac
  • 1 tsp Granulated garlic
  • 0 Kosher salt
  • 0 Black pepper
  • 1 lb Salmon center-cut
  • 3 Tbsp Extra-virgin olive oil
  • 1 cup Yellow onion finely chopped
  • 2 Garlic cloves minced
  • 1 tsp Ground turmeric
  • 0.5 tsp Paprika
  • 0.5 tsp Ground cumin
  • 1 cup Basmati rice
  • 1.75 cups Vegetable broth
  • 8 oz French green beans sliced into thirds
  • 0.5 Lemon juiced
  • 0 Greek yogurt for garnish
  • 0 Slivered almonds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine sumac, granulated garlic, kosher salt, and pepper. Rub the mixture evenly over the salmon fillets.
  3. Heat olive oil in a large ovenproof skillet over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  4. Add minced garlic, turmeric, paprika, and cumin to the skillet. Cook until fragrant, about 1 minute.
  5. Add Basmati rice to the skillet and stir to coat in the spice mixture. Pour in vegetable broth, stir well, then bring to a simmer.
  6. Nestle the salmon fillets into the rice mixture, skin-side down. Scatter green beans over the top.
  7. Transfer the skillet to the oven. Bake for 15-20 minutes or until the salmon is cooked through.
  8. Remove the skillet from the oven and squeeze lemon juice over the dish. Garnish with Greek yogurt and slivered almonds before serving.
