Lemon Garlic Chicken Sandwich with Cucumber and Cabbage Salad

Ingredients
- 2 pieces Chipotle peppers adjust to taste
- 1 cup Chosen Classic Mayo
- 0.5 cup lemon juice
- 0.25 cup Soy sauce
- 3 cloves minced garlic
- 2 tablespoons butter
- 2 tablespoons avocado oil
- 1 teaspoon black pepper
- 2 tablespoons honey
- 1 pound chicken breast
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons avocado oil
- 2 Ciabatta rolls or bread of choice
- 1 tablespoon butter
- 0 lettuce optional
- 0 tomato optional, sliced
- 1 whole cucumber sliced
- 0.5 head cabbage shredded
- 2 tablespoons avocado oil
- 2 tablespoons fresh lemon juice from a fresh lemon
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 teaspoon garlic powder
- 2 tablespoons fresh parsley chopped
Instructions
- Prepare the chipotle avocado mayo by combining Chipotle peppers and Chosen Classic Mayo in a blender. Blend until fully emulsified and smooth.
- Prepare the lemon garlic sauce by adding lemon juice, soy sauce, minced garlic, butter, avocado oil, black pepper, and honey to a pan. Cook over medium heat until the mixture reduces and thickens.
- Slice chicken breast into thin fillets and season with salt and pepper. Sauté in a pan with avocado oil until cooked through.
- Toast your choice of sandwich bread (such as ciabatta rolls) and spread the prepared chipotle avocado mayo on each side.
- Assemble the sandwich by placing cooked chicken fillets onto one side of the bread, drizzle with lemon garlic sauce, and close with the other half of the bread.
- For the cucumber and cabbage salad, combine sliced cucumbers and cabbage in a container, add avocado oil, fresh lemon juice, salt, pepper, garlic powder, and fresh parsley. Shake well and serve chilled.
