Herby Sesame Chicken Salad
An herby salad packed with protein, fresh veggies, and crunchy honey sesame cashews. Perfect for a healthy dinner for two or a delightful meal prep option.

Ingredients
- 2 count chicken breasts Seasoned with salt

- 1 cup raw cashews
- 1 sheet parchment paper
- 1 cup raw cashews
- 2 count chicken breasts
- 2 tablespoons coconut sugar
- 2 tablespoons honey
- 1 tablespoon avocado oil
- 1 cup raw cashews
- 1 tablespoon sesame seeds
- 0 to taste salt
- 2 tablespoons low sodium tamari
- 3 tablespoons rice wine vinegar
- 3 tablespoons avocado oil
- 1 teaspoon honey
- 1 clove garlic grated
- 2 count chicken breasts cooked
- 1 cup cabbage thinly sliced
- 1 cup thai basil leaves only
- 1 cup cilantro leaves only
- 1 cup cucumber thinly sliced
- 1 cup red bell pepper thinly sliced
- 0.33 cup green onion thinly sliced
- 1 cup honey sesame cashews
Instructions
- Preheat oven to 400°F. Season 2 chicken breasts generously with salt and arrange them on a parchment-lined baking sheet. Add 1 cup of raw cashews on the same sheet.
- Roast in the oven until cashews are fragrant and golden brown, about 10-15 minutes. Remove cashews and continue cooking chicken until it reaches an internal temperature of 165°F, approximately 10-15 minutes longer.
- In a small saucepan over medium-low heat, combine 2 tbsp of coconut sugar, 2 tbsp of honey, and 1 tbsp of avocado oil. Stir until sugar is melted and sauce begins to simmer lightly.
- Drizzle the honey sesame sauce over the cooled cashews, along with 1 tbsp of sesame seeds. Mix well, then spread on a baking dish to cool completely. Season with salt to taste.
- Combine 2 tbsp of low sodium tamari, 3 tbsp of rice wine vinegar, 3 tbsp of avocado oil, 1 tsp of honey, and a clove of grated garlic in a measuring cup. Stir well to create dressing.
- Shred the cooked chicken into large pieces using two forks.
- In a large salad bowl, combine 1 cup each of cabbage, basil, cilantro, cucumber, bell pepper, green onion, the shredded chicken, and the prepared honey sesame cashews. Drizzle the dressing over, then toss salad well before serving.
