Turkey, Zucchini & White Bean Skillet Dinner

Ingredients

  • 2 Tbsp extra virgin olive oil
  • 0.5 yellow onion chopped
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 1 lb lean ground turkey
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 0.5 tsp red pepper flakes
  • 0.5 tsp kosher salt more to taste
  • 0.5 tsp black pepper
  • 2 Tbsp tomato paste
  • 15 oz canned diced tomatoes
  • 2 zucchini diced; or 1 large
  • 16 oz Great Northern beans drained and rinsed
  • 0.5 cup shredded mozzarella cheese
  • 0 lemon squeeze, optional
  • 0.5 cup fresh parsley optional

Instructions

  1. Heat a large skillet on medium heat. Add olive oil until heated. Add onion and red bell peppers and saute until soft, about 3-4 minutes.
  2. Add the garlic and cook until fragrant, about 30 seconds. Add ground turkey and seasonings. Break apart the meat with a wooden spoon or masher and cook until turkey is cooked through, about 6-8 minutes.
  3. Stir in tomato paste. Add diced tomatoes and zucchini. Bring to a boil, reduce heat, cover, and cook 5-7 minutes, until zucchini is fork-tender.
  4. Add drained and rinsed white beans and shredded mozzarella cheese. Cook another 1-2 minutes. Top with a squeeze of lemon juice and fresh parsley. Taste and season with additional salt as needed.
