Turkey, Zucchini & White Bean Skillet Dinner

Ingredients
- 2 Tbsp extra virgin olive oil
- 0.5 yellow onion chopped
- 1 red bell pepper diced
- 3 cloves garlic minced
- 1 lb lean ground turkey
- 1 tsp dried oregano
- 1 tsp dried thyme
- 0.5 tsp red pepper flakes
- 0.5 tsp kosher salt more to taste
- 0.5 tsp black pepper
- 2 Tbsp tomato paste
- 15 oz canned diced tomatoes
- 2 zucchini diced; or 1 large
- 16 oz Great Northern beans drained and rinsed
- 0.5 cup shredded mozzarella cheese
- 0 lemon squeeze, optional
- 0.5 cup fresh parsley optional
Instructions
- Heat a large skillet on medium heat. Add olive oil until heated. Add onion and red bell peppers and saute until soft, about 3-4 minutes.
- Add the garlic and cook until fragrant, about 30 seconds. Add ground turkey and seasonings. Break apart the meat with a wooden spoon or masher and cook until turkey is cooked through, about 6-8 minutes.
- Stir in tomato paste. Add diced tomatoes and zucchini. Bring to a boil, reduce heat, cover, and cook 5-7 minutes, until zucchini is fork-tender.
- Add drained and rinsed white beans and shredded mozzarella cheese. Cook another 1-2 minutes. Top with a squeeze of lemon juice and fresh parsley. Taste and season with additional salt as needed.
