Hot Honey Salmon Bites with Charred Pineapple Salsa over Coconut Rice

Ingredients

  • 1 lb Salmon skin removed, cut into cubes
  • 2 tsp Paprika
  • 0.5 tsp Garlic Powder
  • 0.5 tsp Onion Powder
  • 0.125 tsp Cayenne Pepper A pinch
  • 0 Salt to taste
  • 0 Black Pepper to taste
  • 1 tbsp Olive Oil
  • 1 tbsp Hot Honey
  • 1.5 cups Pineapple cubed
  • 1 Red Bell Pepper finely diced
  • 2 Green Onions sliced
  • 1 Serrano or Jalapeno finely chopped
  • 0.25 cup Mint chopped
  • 0.25 cup Cilantro chopped
  • 1 juice of Lime Juice
  • 0.5 tbsp Sesame Oil or olive oil
  • 1 cup Jasmine Rice rinsed
  • 1 tsp Olive Oil
  • 1 cup Coconut Milk
  • 1 cup Water
  • 0.5 tsp Salt
  • 1 Avocado sliced
  • 1 Lime sliced
  • 1 drizzle Hot Honey

Instructions

  1. Cut the salmon into cubes and place them in a bowl. Add the paprika, garlic powder, onion powder, cayenne, salt, pepper, olive oil, and hot honey. Mix well and set aside.
  2. Preheat the air fryer to 400°F. Dice the pineapple into cubes.
  3. Cook the diced pineapple in the air fryer for 10-15 minutes, turning halfway until the pineapple is charred.
  4. Meanwhile, prepare the salsa by combining charred pineapple, red bell pepper, green onions, Serrano or jalapeno, mint, cilantro, lime juice, and sesame or olive oil in a bowl. Mix well.
  5. Add the salmon to the air fryer at 400°F and cook for 15 minutes, turning halfway.
  6. Prepare coconut rice by rinsing the Jasmine rice and combining it with coconut milk, water, olive oil, and salt in a pot. Bring to a boil, then reduce heat and simmer until the liquid is absorbed.
  7. Serve the cooked salmon bites over the coconut rice with a few spoonfuls of salsa, sliced avocado, a squeeze of lime, and a drizzle of additional hot honey.
