Broccoli Caesar Pasta Salad

Ingredients

  • 8 oz pasta of your choice
  • 2 tbsp butter
  • 1 cup breadcrumbs for the croutons
  • 1 head broccoli chopped, raw or blanched
  • 0.25 cup mayonnaise
  • 0.25 cup greek yogurt
  • 2 tbsp olive oil
  • 1 clove garlic finely minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 0 salt
  • 0 black pepper
  • 1 avocado chopped
  • 0.5 cup green onions
  • 0.25 cup basil fresh, chopped
  • 0.5 cup parmesan cheese finely grated

Instructions

  1. Bring a large pot of water to a boil over medium-high heat. Add the pasta and cook according to package instructions until al dente.
  2. In a skillet, melt butter over medium heat. Add breadcrumbs and toast until they are golden brown and crispy.
  3. Quickly blanch the chopped broccoli by adding them to the boiling pasta water for the last minute of pasta cooking, then immediately transfer to an ice bath.
  4. In a mixing bowl, combine mayonnaise, olive oil, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, salt, and black pepper. Whisk until smooth.
  5. Assemble the salad by combining pasta, broccoli, chopped avocado, green onions, and basil in a large bowl. Add the dressing and toss well to coat.
  6. Top the salad with toasted breadcrumbs and a generous amount of grated Parmesan cheese before serving.
