Broccoli Caesar Pasta Salad

Ingredients
- 8 oz pasta of your choice
- 2 tbsp butter
- 1 cup breadcrumbs for the croutons
- 1 head broccoli chopped, raw or blanched
- 0.25 cup mayonnaise
- 0.25 cup greek yogurt
- 2 tbsp olive oil
- 1 clove garlic finely minced
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 2 tsp Worcestershire sauce
- 0 salt
- 0 black pepper
- 1 avocado chopped
- 0.5 cup green onions
- 0.25 cup basil fresh, chopped
- 0.5 cup parmesan cheese finely grated
Instructions
- Bring a large pot of water to a boil over medium-high heat. Add the pasta and cook according to package instructions until al dente.
- In a skillet, melt butter over medium heat. Add breadcrumbs and toast until they are golden brown and crispy.
- Quickly blanch the chopped broccoli by adding them to the boiling pasta water for the last minute of pasta cooking, then immediately transfer to an ice bath.
- In a mixing bowl, combine mayonnaise, olive oil, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, salt, and black pepper. Whisk until smooth.
- Assemble the salad by combining pasta, broccoli, chopped avocado, green onions, and basil in a large bowl. Add the dressing and toss well to coat.
- Top the salad with toasted breadcrumbs and a generous amount of grated Parmesan cheese before serving.
