Salmon Rice Bowl

This TikTok salmon bowl comes courtesy of creator @emilymariko. To make her popular dish, you’ll need two main ingredients, salmon and rice, and they don’t even have to be made to order. Emily uses leftovers—and I’ll never turn down a good leftovers repurposing—but fresh ingredients will also do the trick.

Salmon Rice Bowl

Cook time: 20 minutes

Servings: 2

Ingredients

  • 1 Fillet Salmon
  • 2 Cups Rice
  • 2 tbsp Soy Sauce
  • 0.5 Whol Avocado
  • 1 tsp Sesame Seeds
  • 1 tbsp Kewpie Mayo
  • 1 tbsp Sriracha
  • 0.5 Whole Cucumber
  • 0.25 Cup Scallions

Instructions

  1. Cook your salmon in the oven or on a skillet. Once it's done, use a fork to shred until it’s fluffy and there are no more big chunks.
  2. Add the rice over the flaked salmon, then place an ice cube in the middle of the rice. Cover with parchment paper so the steam won’t escape during heating. Microwave on high for about 2 minutes. Remove from the microwave and discard the parchment.
  3. Add the soy sauce to the salmon and rice and mix until it’s all fully incorporated. Drizzle zigzags of sriracha and mayo on top. Finish with the slices of avocado, kimchi and a sprinkle of sesame seeds if you’d like. If you’re looking for more recipes, then try this delicious miso salmon.
  4. You can top this dish according to your tastes—add some sesame ginger cucumbers or chopped scallions. We love to use black sesame seeds in addition to white, for the color contrast.
