Peach and Burrata Crostini

Ingredients
- 2 whole yellow peaches sliced
- 2 whole white peaches sliced
- 1 tablespoon champagne vinegar
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- 4 slices sourdough bread
- 2 tablespoons olive oil
- 2 balls burrata halved
- 12 whole cherries sliced
- 2 teaspoons hot honey
- 0 salt
- 0 black pepper
Instructions
- Slice the yellow and white peaches and add them to a bowl.
- Drizzle the peaches with champagne vinegar and olive oil. Sprinkle fresh thyme leaves, then toss to combine.
- Toast slices of sourdough bread on a skillet with olive oil until golden brown on both sides.
- Add half of a burrata ball to each toast, and gently smash it down with a fork.
- Top with slices of peaches and cherries, then drizzle with hot honey. Season with salt and pepper.
