Peach and Burrata Crostini

Peach and Burrata Crostini

Ingredients

  • 2 whole yellow peaches sliced
  • 2 whole white peaches sliced
  • 1 tablespoon champagne vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves
  • 4 slices sourdough bread
  • 2 tablespoons olive oil
  • 2 balls burrata halved
  • 12 whole cherries sliced
  • 2 teaspoons hot honey
  • 0 salt
  • 0 black pepper

Instructions

  1. Slice the yellow and white peaches and add them to a bowl.
  2. Drizzle the peaches with champagne vinegar and olive oil. Sprinkle fresh thyme leaves, then toss to combine.
  3. Toast slices of sourdough bread on a skillet with olive oil until golden brown on both sides.
  4. Add half of a burrata ball to each toast, and gently smash it down with a fork.
  5. Top with slices of peaches and cherries, then drizzle with hot honey. Season with salt and pepper.
